Recipe: Miso Caramel Ice Cream

Say goodbye to summer with this unforgettable, protein-packed ice cream that tastes like sweet and salty cheesecake. It gets its creamy texture from a mix of gut-friendly Greek yogurt, kefir, and cottage cheese, which are all rich in probiotics to support your digestion and gut microbiome. This delicious treat is also packed with dates and miso for a healthy dose of fiber and flavor.

Ingredients

(Serves 2)

  • 1 cup full-fat Greek yogurt

  • 1 cup cottage cheese

  • ½ cup kefir

  • 10 Medjool dates, pitted

  • 1 tsp white miso paste

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • Optional: 1 tbsp maple syrup (if your dates aren’t sweet enough)

  • Toppings: Cacao nibs, diced strawberries, flaky sea salt

Method

  1. Blend 8 dates, miso, vanilla, salt, maple syrup (if using) and kefir until smooth.

  2. Add yogurt and cottage cheese and blend again until creamy.

  3. Chop the remaining 2 dates into fine pieces and stir into the mixture. 

  4. Pour into a shallow container and freeze for 2–3 hours, stirring once halfway.

  5. Serve and top with cacao nibs, diced strawberries and a sprinkle of flaky sea salt. Enjoy!
