Chocolate pudding that’s good for your gut?

Ingredients
300 g silken tofu (1 block)
100 g dark chocolate (minimum 70% cocoa)
2 tbsp cocoa powder
1 tbsp extra virgin olive oil (plus extra for drizzling)
flaky sea salt
optional: maple syrup to taste
Instructions
Break the dark chocolate into small pieces and gently melt it in a heatproof bowl over simmering water (double boiler method) or in the microwave. Stir until smooth.
Add the silken tofu, melted chocolate, and cocoa powder to a blender or food processor. Blend until smooth and creamy. Optional: If you prefer a sweeter taste, add maple syrup and blend again.
Transfer the pudding to serving bowls.
Drizzle with extra virgin olive oil, sprinkle with flaky sea salt, and add your favorite toppings such as chopped nuts, frozen berries, or grated dark chocolate.
Enjoy immediately or refrigerate for a firmer texture before serving.
