Recipe: White bean panzanella

When it’s just too hot outside to cook, this fresh summer panzanella comes together in minutes.

Cannellini beans and sourdough add gut-friendly fiber and postbiotics, while tomatoes and extra virgin olive oil are packed with polyphenols to support your gut lining and overall health.

It’s a simple, satisfying dish that’s perfect for warm days.

Ingredients (Serves 2)

  • 1 can cannellini beans, drained and rinsed

  • 2 cups heirloom tomatoes, chopped

  • 1 small shallot, thinly sliced

  • 2 slices of sourdough

  • 1 small garlic clove, crushed and chopped

  • 2 tbsp red wine vinegar

  • 3 tbsp extra virgin olive oil

  • Handful of fresh basil leaves

  • Salt and pepper

  • 1 scoop of Daily30+

Method

  1. Toast sourdough and tear into small chunks.

  2. Toss chunks with olive oil, garlic, and a pinch of salt.
