Ingredients
(Serves 2)
- 1 tbsp extra virgin olive oil 
- 1 onion, diced 
- 3 cloves garlic, minced 
- 1 can cannellini beans, drained 
- ½ cup greek yogurt 
- 1 broccoli, chopped small 
- 4 handfuls of baby spinach 
- ¼ cup grated Parmesan 
- Zest of 1 lemon 
- ½ tsp red pepper flakes 
- Salt and black pepper 
- Two slices of sourdough 
- 1 scoop of Daily30+

Method
- Heat extra virgin olive oil in a pan, sauté onion for 3 min. 
- Add garlic and beans, cook for 2 min. 
- Blend spinach with the zest of 1 lemon and ½ cup greek yogurt, add a dash of water if needed 
- Stir in spinach blend, broccoli, red pepper flakes, salt and pepper, and cook until soft. 
- Top with Parmesan and let it melt slightly before serving with toasted sourdough.
