RECIPE: Creamy Broccoli Beans

This gut-loving skillet blends fiber-rich cannellini beans, prebiotic garlic, and nutrient-packed spinach to support a diverse and healthy gut microbiome. Tossed with broccoli, lemony yogurt, and Parmesan, and served with toasted sourdough, it’s a flavorful meal that feeds your beneficial bacteria while keeping your digestion happy.

Ingredients

(Serves 2)

  • 1 tbsp extra virgin olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 can cannellini beans, drained

  • ½ cup greek yogurt

  • 1 broccoli, chopped small

  • 4 handfuls of baby spinach

  • ¼ cup grated Parmesan

  • Zest of 1 lemon

  • ½ tsp red pepper flakes

  • Salt and black pepper

  • Two slices of sourdough

  • 1 scoop of Daily30+

Method

  1. Heat extra virgin olive oil in a pan, sauté onion for 3 min.

  2. Add garlic and beans, cook for 2 min.

  3. Blend spinach with the zest of 1 lemon and ½ cup greek yogurt, add a dash of water if needed

  4. Stir in spinach blend, broccoli, red pepper flakes, salt and pepper, and cook until soft.

  5. Top with Parmesan and let it melt slightly before serving with toasted sourdough.
