This smacked cucumber and edamame salad is the perfect snack to support your gut health and stay hydrated, and it comes together in 5 minutes.

Cucumbers and edamame are packed with potassium, which works alongside the sodium in soy sauce to pull moisture straight into your cells. Even smacking the cucumber serves a purpose, breaking down the plant cell walls to release that trapped juice and help your gut digest it with ease.

Add in 18 g of plant protein from the edamame and prebiotic fuel for your gut microbes from garlic and spring onions, and you’ve got a delicious, healthy, and hydrating snack.

Prep Time: 5 minutes

Ingredients

  • 1 cucumber

  • 150 g edamame beans

  • 1/2 tsp chilli flakes

  • 1 tbsp sesame oil

  • 1 tsp soy sauce

  • 1 tsp rice wine vinegar

  • 1 tsp black sesame seeds

  • 1 tsp white sesame seeds

  • 1 garlic clove, grated

  • 1 spring onion, thinly sliced

Method

  1. Bash the whole cucumber a few times with a rolling pin or the back of a knife until it cracks, then chop into bite-sized chunks.

  2. Mix the cucumber and edamame with the chili flakes, sesame oil, soy sauce, rice wine vinegar, and garlic in a bowl.

  3. Scatter over the sesame seeds and spring onion, then serve. Enjoy!
