Recipe: Strawberry, chia, and basil seed pudding

This deliciously creamy breakfast pudding is super hydrating and great for your gut health, making it a perfect way to start your day in the warmer months.

Strawberries aren’t just for flavor, they're over 85% water by weight and packed with key electrolytes like potassium.

When you soak chia and basil seeds, they absorb up to twelve times their weight in liquid, creating a thick, soluble fiber known as mucilage. This gel acts as a slow-release hydration system for your digestive tract, keeping your cells hydrated for hours.

Serves: 4

Prep Time: 5 minutes (+ soaking overnight)

Ingredients

  • 1/2 cup chia seeds

  • 1/2 cup basil seeds

  • 500 ml kefir

  • 1 cup milk of your choice

  • 1 tsp vanilla extract

  • 1 cup of frozen strawberries

  • Toppings: Greek yogurt, macadamia nuts, or any nuts or seeds, fresh strawberries or peaches

Method

  1. Blend the strawberries, kefir, milk, and vanilla together until creamy and smooth. If it's too thick to pour after the strawberries have been blended, add more milk or kefir.

  2. Add the chia seeds and basil seeds to a glass container or bowl.

  3. Add the strawberry mixture and whisk together until thoroughly mixed.

  4. Cover and chill until thickened into a pudding for at least 4 hours, or ideally overnight.

  5. To serve, layer with Greek yogurt, fresh strawberries, and top with macadamia nuts or any other nuts and seeds. Peaches are also a great addition. Enjoy!
