Recipe: Strawberries and Cream Chia and Basil Seed Pudding

This deliciously creamy breakfast pudding is super hydrating and great for your gut health, making it a perfect way to start your day in the summer months.

When you soak chia and basil seeds, they absorb up to twelve times their weight in liquid, creating a thick, soluble fiber known as mucilage. This gel acts as a slow-release hydration system for your digestive tract, keeping your cells hydrated for hours.

The strawberries aren’t just for flavour, they're over 85% water by weight and packed with key electrolytes like potassium. Combined with the live cultures from kefir and greek yogurt, this breakfast pudding will support your hydration levels and your gut health, for steadier energy until lunch.

Serves: 4

Prep Time: 5 minutes (+ soaking overnight)

Ingredients

  • 1/2 cup chia seeds

  • 1/2 cup basil seeds

  • 500ml kefir

  • 1 tsp vanilla extract

  • 1 cup of frozen strawberries

  • Toppings: Greek yogurt, macadamia nuts or any nuts or seeds, fresh strawberries or peaches

Method

  1. Blend the strawberries and kefir together until creamy and smooth. If it's too thick after the strawberries have been blended, add more kefir.

  2. Add the chia seeds and basil seeds to a glass container or bowl. Add the strawberry kefir, vanilla, and whisk together until throughly mixed.

  3. Cover and chill until thickened into a pudding for at least 4 hours, or ideally overnight.

  4. To serve, layer with greek yogurt, fresh strawberries, and top with macadamia nuts (or any nuts or seeds of your choosing) and fresh strawberries. Peaches also go nicely. Enjoy!
