Recipe: Peach Caprese Salad

You don’t have to do much to make these ingredients taste amazing. Just dress with some polyphenol-rich extra virgin olive oil, season, and you're done.

The leftovers, which have more time to marinate, are arguably even more delicious, so it’s a winner for taking to a picnic or making ahead of time for a barbecue with friends. It's the perfect no-cook recipe to minimise your time in the kitchen and maximise being outside enjoying the good weather.

Serves: 2-4

Ingredients

  • 1 ball of mozzarella or burrata

  • ~400g of the best tomatoes you can find - we used 1 large and lots of smaller tomatoes but any will work

  • 3 peaches - we used white flat peaches

  • a handful of basil leaves

  • salt and pepper to taste

  • extra virgin olive oil

Method

  1. Chop the tomatoes and peaches to your preference

  2. Add to a bowl with the basil leaves, salt, pepper and olive oil.

  3. Stir to combine and then top with the mozzarella and an extra drizzle of extra virgin olive oil. Enjoy!
