You don’t have to do much to make these ingredients taste amazing. Just dress with some polyphenol-rich extra virgin olive oil, season, and you're done.

Ingredients
1 ball of mozzarella or burrata
~400g of the best tomatoes you can find - we used 1 large and lots of smaller tomatoes but any will work
3 peaches - we used white flat peaches
a handful of basil leaves
salt and pepper to taste
extra virgin olive oil

Method
Chop the tomatoes and peaches to your preference
Add to a bowl with the basil leaves, salt, pepper and olive oil.
Stir to combine and then top with the mozzarella and an extra drizzle of extra virgin olive oil. Enjoy!
