Recipe: Pea Bean Smash

This simple yet satisfying bean and pea smash is a powerful way to kickstart your day. White beans and peas, are fantastic sources of dietary fiber, which supports digestive health, promotes feelings of fullness, and helps stabilize blood sugar levels. They are also packed with plant-based protein, essential for muscle maintenance and sustained energy. Extra virgin olive oil provides healthy monounsaturated fats, known for their heart-healthy properties, while fresh lemon juice contributes a boost of Vitamin C.

Ingredients

  • 1 can white beans, drained

  • ½ cup fresh or frozen peas

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • ½ tsp garlic powder

  • ¼ tsp chili flakes

  • Eggs cooked to your preference (we suggest fried or soft boiled)

  • ¼ cup fresh herbs (parsley, basil, or mint)

  • Handful of cherry tomatoes for garnish

  • Toasted sourdough

  • Salt & pepper

Method

1. Blend beans, peas, olive oil, lemon juice, garlic powder, chili flakes, salt & pepper until chunky.

2. Spread thickly on toasted sourdough.

3. Top with eggs cooked to your liking, lots of fresh herbs, sliced cherry tomatoes, and a scoop of ZOE's Daily30+.
