Ingredients
4 eggs
75ml almond milk or milk of your choosing
1 tsp maple syrup
1 tbsp extra virgin olive oil
1 tsp baking powder
Pinch of ground cinnamon
120g almond flour
½ tsp vanilla extract
3 tbsp cacao powder
Toppings:
Berries
Chopped nuts
Greek yogurt
Maple syrup
Method
Whisk eggs and almond milk.
Add maple syrup, baking powder, cinnamon, almond flour, cocoa powder and vanilla.
Cook on medium-low heat, spoon batter, cook 2-3 mins each side until golden.
To serve, stack pancakes and top with greek yogurt, berries, and chopped nuts.
Drizzle a little bit of maple syrup overtop and enjoy!
