Recipe: Cheryl's Chocolate Almond Pancakes

These chocolate almond pancakes are ZOE Member Cheryl’s favorite breakfast — a recipe that reflects exactly what ZOE’s Better Breakfast Guide recommends: protein, fiber, and healthy fats working together to support steady energy, balanced blood sugar, and better gut health.

“It’s my go-to breakfast: berries with nuts and pancakes made with almond flour. It’s a staple whether I’m at home or traveling. I know it helps my gut, it helps me, and it gives me the energy for the rest of the day.”

Ingredients

  • 4 eggs

  • 75ml almond milk or milk of your choosing

  • 1 tsp maple syrup

  • 1 tbsp extra virgin olive oil

  • 1 tsp baking powder

  • Pinch of ground cinnamon

  • 120g almond flour

  • ½ tsp vanilla extract

  • 3 tbsp cacao powder

Toppings:

  • Berries

  • Chopped nuts

  • Greek yogurt

  • Maple syrup

Add a scoop
of energy*

Delicious. Crunchy. Energizing.

Method

  • Whisk eggs and almond milk. 

  • Add maple syrup, baking powder, cinnamon, almond flour, cocoa powder and vanilla.

  • Cook on medium-low heat, spoon batter, cook 2-3 mins each side until golden.

  • To serve, stack pancakes and top with greek yogurt, berries, and chopped nuts.  

  • Drizzle a little bit of maple syrup overtop and enjoy!
