Ingredients
1 tbsp extra virgin olive oil
1 onion
3 cloves garlic, minced
1 tsp smoked paprika
½ tsp dried thyme
1 can butter beans, with liquid (do not drain)
1 red bell pepper, sliced
½ cup cherry tomatoes, halved
1 tbsp grated Parmesan (optional)
zest of 1 lemon
¼ cup fresh parsley or basil
salt and black pepper

Method
Heat extra virgin olive oil in a pan, sauté onions, cherry tomatoes, and peppers until soft.
Add garlic, smoked paprika, thyme, salt, and black pepper. Stir until fragrant.
Pour in butter beans with their liquid.
Simmer uncovered for 10–12 minutes, stirring occasionally, until thick and creamy.
Stir in lemon zest and Parmesan, then remove from heat.
Serve warm with toasted sourdough and enjoy.
