Recipe: Sheet-pan salmon with lemon, greens, and Daily30 crunch

This one-tray salmon with lemony greens and a Daily30 crust is a simple, omega-3-rich dinner with minimal prep and easy clean-up.

Ingredients

  • 2 salmon fillets

  • 1 tbsp extra virgin olive oil

  • 1 lemon (slices and juice)

  • 1 garlic clove, grated

  • salt and pepper

  • 1 bag greens (spinach) or 1 head broccoli, cut small

  • 1 scoop Daily30

Swaps

  • salmon → trout, sea bass, or tofu

  • spinach → kale or green beans

Additions

  • cherry tomatoes on the tray

  • capers or olives

  • yogurt and herbs as a sauce

Method

  1. Heat oven to 200°C / 180°C fan. Place salmon on a tray; rub with olive oil, garlic, salt, pepper, and lemon slices.

  2. Add broccoli (or cook broccoli first, then add spinach later). Roast for 12–15 mins, until the salmon is just cooked through.

  3. Sprinkle Daily30 over the salmon for the last 5 minutes of cooking .

  4. If using spinach, toss it onto the tray for the last 2 mins to wilt.

  5. Finish with a squeeze of lemon.
