Recipe: Sardines on toast

This 10-min lunch recipe is the perfect way to add more oily fish into your diet.

The sardines are complimented by the tomato, lemon, garlic, and parsley. All served on seeded sourdough to ensure you stay fuelled all afternoon long.

Ingredients

  • 2 slices seeded sourdough

  • 1 large tomato, sliced

  • 1 small garlic clove

  • 1/2 shallot, finely sliced into semicircles

  • juice of half a lemon

  • 1 tin sardines

  • 1 tbsp extra virgin olive oil

  • black pepper

  • 10 g parsley, finely chopped

  • 1/4 tsp smoked paprika (optional)

  • 1/4 tsp zaatar (optional)

Swaps

  • sardines → mackerel

Additions

  • kimchi or sauerkraut

  • avocado

  • rocket

Method

  1. Toast the sourdough.

  2. Meanwhile, in a bowl, mix the shallots and lemon and leave to rest of a few mins.

  3. Rub the garlic clove over the toast. Do this lightly for some flavor, heavily for more.

  4. Lay the sliced tomato on the toast.

  5. Top with the shallots and lemon.

  6. Add the sardines next.

  7. Season with black pepper, parsley, and optional spices and finish with a drizzle of olive oil.
