My chocolate pecan bites from my new cookbook, Good Mood Food, come together in just minutes.
These chocolatey bites taste as good as they look and are best served with a cup of freshly brewed coffee. Make sure you use a high quality peanut butter with few ingredients, as the labels can look the same as highly processed sweeter varieties. The same goes for the chocolate.
Good Mood Food is publishing on October 22nd and is available for pre-order now.
Prep time 10 minutes plus freezing time
Makes 12 bites
Ingredients
80 g 70% dark chocolate
70 g unsweetened crunchy peanut butter
70 g chia jam (recipe in Good Mood Food)
12 pecans
Pinch of sea salt
Top ups
Mixed seeds
Swaps
Walnuts for pecans
Any nut butter for peanut butter
Method
Line a medium baking tray with baking parchment. Break the chocolate into small pieces and place into a heatproof bowl set over a saucepan of barely simmering water. Stir until melted. Alternatively microwave for 30 second intervals, stirring as it melts.
When ready, spoon 12 1 inch round disks onto the lined baking tray, making sure to leave sufficient space between each one.
Place a teaspoon of peanut butter on each, followed by chai jam.
Cover each one with the remaining melted chocolate.
Press a pecan nut onto the centre and press down gently. Sprinkle some sea salt all over, then freeze for 1-2 hours until set. Store in the freezer and enjoy with a cup of coffee.
