Ingredients
6 dried dates, soaked for 24–48 hours in rose water, OR 6 medjool dates, seed removed
2 tbsp ricotta cheese
1 tsp honey
2 tbsp pistachios, finely ground
2 tbsp almonds, finely ground
A pinch of saffron (optional)
¼ tsp rose water (optional)
To garnish: extra pistachio and dried rose petals
Method
In a bowl, mix together the ricotta, ground nuts and honey, along with the saffron and rose water if using.
Taste your mixture and adjust the sweetness to your liking.
Using a small teaspoon, fill the dates with the creamy mixture.
To garnish, roll the filled dates in extra ground pistachio and dried rose petals.
