    Ingredients

    • 4 carrots, chopped into 2 cm chunks

    • 1 tbsp Harissa paste

    • 1 tbsp honey

    • juice and zest of two limes

    • salt and pepper

    • 2 garlic cloves, finely chopped

    • Handful parsley, finely chopped

    • 1 scoop Daily30

    Swaps

    • Parsley → Coriander

    Method

    1. Set the oven to 200°C / 180°C fan.

    2. Add the carrots and garlic to a baking tray, then mix through the harissa paste, honey, lime zest, salt, and pepper.

    3. Roast for 30 minutes until al dente.

    4. Top with lime juice, parsley, and Daily30 to serve.
