Ingredients
180 g silken tofu
160 ml 2% fortified milk
2 tbsp Gale’s lemon curd
2 tbsp chia seeds
48 g freshly squeezed lemon juice
½ tsp vanilla extract
Method
Place all the ingredients in a high-powered blender and blitz until silky smooth.
Divide equally between glasses.
Allow to rest for at least 15 minutes before serving, or chill in the fridge until needed.
Add your favorite toppings — a sprinkle of cinnamon, berries, or chopped nuts.
