RECIPE: Chia lemon pots

    These fresh, tangy chia lemon pots are an ideal way to start your day. Combining chia seeds with silken tofu, they’re packed full of gut-healthy fiber and plant protein.

    The added lemon curd and fresh lemon juice give them a refreshing, delicious flavor that’ll satisfy your taste buds and your sweet tooth.

    Prep time: 5 minutes

    Total time: 5 minutes

    Diet: Vegetarian

    Fiber: 6.7 grams

    Ingredients

    • 180 g silken tofu

    • 160 ml 2% fortified milk

    • 2 tbsp Gale’s lemon curd

    • 2 tbsp chia seeds

    • 48 g freshly squeezed lemon juice

    • ½ tsp vanilla extract

    Method

    1. Place all the ingredients in a high-powered blender and blitz until silky smooth.

    2. Divide equally between glasses.

    3. Allow to rest for at least 15 minutes before serving, or chill in the fridge until needed.

    4. Add your favorite toppings — a sprinkle of cinnamon, berries, or chopped nuts.
