Ingredients
(Serves 2)
1 can white beans, with liquid (do not drain)
1 tbsp extra virgin olive oil
3 cloves garlic, minced
3 shallots, diced
Zest and juice of 1 lemon
½ tsp red pepper flakes
1 tbsp capers, chopped
1 tsp fresh rosemary, finely chopped
Salt and black pepper
2 slices sourdough
2 tbsp chopped parsley
1 scoop of Daily30+
Heat extra virgin olive oil in a pan, sauté garlic and shallots until soft.
Add butter beans (with their liquid), lemon zest and juice, red pepper flakes, salt and pepper.
Mash slightly, then serve on toasted bread with fresh parsley and a scoop of Daily30+. Enjoy!
